A revival of Kens Cafe - A quick chicken, garlic and lemon dish

One whole head of garlic split into cloves
Two lemons cut into quarters

I usually allocate 3 chicken thighs per person, but I am a bit of a piggy ;biggrin

Spread the the garlic cloves evenly over the base of an oven dish
Place the chicken thighs on top of the garlic
Put the lemon quarters in between the chicken thighs, nice and tightly

A drizzle of honey over the chicken thighs and we're ready to go

30-35 mins @ 180 in the fan oven, and they are done
Usually serve them with roasted carrots and sweet potato

    Much to the chagrin of Mrs E, I tend to eat all of the garlic too ;biggrin
  • I do this too but also add par-boiled sliced potatoes and a knob of butter.

    Baguettes turned out terrific (OK, 2nd batch did...), pittas pretty damned good, and now having a go at his ciabatta recipe.

    This baking business is pretty addictive, you know.

  • Nowt wrong with being born south of Watford Gap...though my late mum was a Cheshire lass...her father was Welsh..my sisters lives in Scotland......I have cousins in Stockport......but I no longer wear a cloth cap....seeing as I lost it on a train special to Wrexham..stuck me head out the window!!
